Her cuisine is rooted in Mediterranean and Italian traditions, focusing on fresh, seasonal ingredients and simple, balanced dishes—perfect for a refined yet relaxed sailing lifestyle. She also incorporates Japanese-fusion influences inspired by her time in Japan, adding creativity and light, modern flavors to her menus.
Comfortable in a dual role, Sabrina supports both interior service and deck operations, making her a valuable all-round crew member.

Patrick is an enthusiastic sailor and a very conscientious captain who prides himself on creating an excellent rapport with his guests. With more than a decade of professional sailing experience, he has navigated all the main yachting destinations in Europe, the Caribbean and the USA.
His keen eye for detail and an impeccable understanding of the Guests’ expectations have gained him a great reputation as an attentive and capable captain that aims to provide his guests with a relaxed and safe environment, even in the most challenging situations.
Prior to joining Ammonite in 2020, Patrick accumulated a wealth of experience on a variety of sailing yachts from modern racers to classic gaff-rigged yachts.
His most recent superyacht appointments were as Captain and engineer aboard the 21m Luca Brenta designed ‘Camilla’ and the 29m German Frers designed Bristolian.
A passionate sailor and rower; when not on the water, he enjoys skiing, walking and music.

A passionate and experienced sailor, Jack brings over a decade of professional yachting experience and more than 100,000 nautical miles under his belt.
With five Atlantic crossings and a Pacific passage from Tahiti to Chile, his deep-sea expertise is remarkable. Jack is a calm and competent leader on deck, with a strong technical understanding and an eye for safety, maintenance, and seamless guest experiences.
He thrives in dynamic sailing programs and has proven himself across a range of performance yachts and expedition-style cruising—most recently navigating through the Patagonian fjords, Falkland Islands, and delivering vessels across ocean routes.
Outside of sailing, Jack is an active and adventurous soul. He enjoys watersports, golf, skydiving, and swimming, and has a creative side too—often found playing the piano when off duty.
His positive attitude and enthusiasm for the outdoors bring a great energy to the team and guests alike.

Ammonite is a Southern Wind 82 and is the ideal yacht for safe and luxury family cruising. Her size allows plenty of room for fun and comfort but keeps you close to the wind and the water, making your charter and unforgettable holiday at sea. Built on high standards, she features a lifting keel which guarantees access to many shallow harbours and allows you to sneak into private bays and take the best spot right off the beaches. Ammonite is suitable for couples, families and/or group of friends up to 6 guests.The interior layout follows Southern Wind’s trademark configuration: crew quarters and galley aft and the Master Cabin, with a large en-suite bathroom forward in the quietest area of the yacht. The “casual lounge” open space saloon has two coffee tables, one that can convert into a dining table and the other one that flips open to reveal a custom made and purpose engineered wooden Scrabble table where the guests can enjoy the game. Bleached oak furniture is trimmed with wengè inserts and carbon fibre, chocolate leather is offset by polished stainless steel.The sophisticated upholstery colour palette features a chic blend of greys, browns and yellows. The window frames and mullions feature the same colour and finish as the hull, creating a feeling of unity aboard. The VIP cabin, also forward, has double berth and additional foldaway bunk and plis bathroom that can be used as a day
head. The twin cabin amidships with two single berths is also ensuite. The guest area is served by a dedicated companionway to offer better separation and privacy between guests and crew.
