A seasoned sailor and accomplished chef, he combines technical precision with a warm, authentic approach to hospitality, creating memorable dining experiences even in the world’s most remote waters.
Yoann refined his culinary craft aboard the legendary tall ship Belem, where working at sea demanded creativity, discipline and adaptability. He later joined Escales Polaires aboard Isbjornen II and Tarmo, overseeing provisions and preparing meals for both crew and guests during demanding polar expeditions.
Passionate about coastal and international voyages, Yoann is recognised for his professionalism, calm presence and ability to deliver exceptional cuisine in challenging environments.
Whether preparing comforting dishes after a day of exploration or sharing the simple pleasure of good food at sea, he helps create the welcoming atmosphere that makes every journey aboard Tarmo unforgettable.
