With over eight years of culinary experience and a deep passion for global cuisine, Daniel is a dedicated chef that brings creativity, adaptability, and refined technique to every galley.
His cooking journey began in the vibrant restaurant scenes of Australia and New Zealand and has since evolved across continents and oceans—most recently as a freelance chef aboard charter yachts. His experience spans roles as Sole Chef in both the Caribbean and Mediterranean. On land, he has held Head Chef roles in New Zealand and Australia, including leading a high-volume vegan restaurant and managing busy kitchen teams. His specialties include plant-based cuisine, international fusion, and adapting menus to suit dietary preferences and diverse guest expectations. Chef Daniel is excited to start his new position onboard AMITATU.

Dane has 14 years of yachting experience as both a Captain/Engineer and Chief Officer on 25m-50m vessels, both private and charter. He is very driven person, energetic and loves his work. Safety and security of the vessel, guests and crew are his number one priority, all while making sure that the owners and guests have unforgettable experiences whilst onboard and that everything flows as seamlessly as possible. He will always go the extra mile for any task required of me and to lead by example so that the crew may follow suit. He is a very hands-on captain, with a good engineering knowledge and great navigational skills. He has experience cruising in the following areas - Mediterranean, Caribbean, Hawaii, Mexico, Tahiti, Philippine Sea, Papua New Guinea, Australia east, north and west coast, New Caledonia, Bahamas, USA west and east coast, Norway, Germany. Dane have experience in game fishing, world record spear fishing, scuba diving and various other water sports. He is excited to offer great experience to charter clients aboard AMITATU.

Chole originally from South Africa, is highly motivated and detail-oriented Stewardess with extensive experience in both yachting and land-based roles. Proven ability to thrive under pressure, with a strong commitment to delivering exceptional service. Worked as a Stewardess/Crew Chef on a 25m yacht, managing a team, handling guest service, housekeeping, culinary duties, inventory, and interior accounts. Additional experience includes property management, personal assistant roles, and teaching English abroad. Holds a BTech degree in Hospitality Management from CPUT and a diploma in Accommodation Management. Chloe is ready to bring her professionalism and a versatile skill set to her new position aboard AMITATU.

Sean, The Chief Officer is happy to welcome you aboard. He brings a rich international background, having been born in Palma de Mallorca, Spain, to an English father and a Swedish mother. This diverse upbringing has fueled his love for adventure and broadened his global perspective. With over a decade of experience in the yachting industry, Sean has traveled extensively, meeting remarkable people worldwide. His career aligns perfectly with his passion for the sea, water sports, and surfing. In his free time, he loves exploring new cultures and experiencing new destinations. A dedicated surfer and beach enthusiast, he also enjoys hiking and has recently embraced yoga for the balance it provides.
Sean’s true passion lies in creating memorable experiences, for him, the charter experience is all about providing the best for the guests, working harmoniously with the crew, and offering an unparalleled yachting adventure.
