In the past six years, I’ve been based in Australia, where I’ve expanded my range of experience working in private residences, remote islands, and expedition charters. My cuisine is rooted in Mediterranean tradition, with refined influences from Asian and Latin American flavors. I have a strong focus on fish and seafood, working with seasonal ingredients to create balanced, elegant dishes.
