Antonia Paparodopoulou

Paul began his career as a waiter in restaurants in central Athens, then later shifted direction, taking on a customer service role in an office while also working one season at the front desk of a local hotel in Mykonos. By 2023, he had joined Nobu Matsuhisa Athens as a Junior Sous Chef. Within just a year, he earned a promotion to Sous Chef in Paros at Matsuhisa.
What is the one ingredient you cannot live without?
“The one ingredient I simply can’t do without is salt. It has a quiet but powerful way of elevating any dish, bringing out depth and balance in flavours that might otherwise go unnoticed. Salt isn’t just for savoury cooking—it plays a vital role in pastry as well, enhancing sweetness and adding complexity in subtle, essential ways.”

A graduate of the Merchant Marine Academy in 2002, he began his career on board merchant vessels before transitioning to yachting in 2006. Over the years, he has gained invaluable experience navigating worldwide, mastering international regulations, and refining his skills in deck operations and crew coordination. These experiences have deepened his respect for the sea and reinforced his commitment to safety and service. Captain George particularly enjoys the versatility of yachting, from navigating open waters to creating exceptional guest experiences. Dedicated to upholding the highest standards of professionalism, Captain George prioritises safety while delivering unforgettable journeys at sea. Captain George remained on board throughout the entire refit in Las Palmas and has continued to command the yacht since her entry into the charter market in 2025

“I believe her most outstanding features are the spacious open decks, the impressive selection of water toys, and her excellent performance in a wide range of weather conditions. She is both comfortable and remarkably seaworthy, which makes her very special. In addition, her harmonious design and refined style create a sense of balance that is reflected in our daily life on board.”

How do you get people to feel safe / keen to try out a new watersport?
“I always start by giving a clear and simple demonstration of how the equipment works, emphasising on safety measures and making sure they feel comfortable. I encourage them to take their time, start slow, and build confidence step by step. Positive reinforcement and staying close by for support and help guests feel confident and excited to try something new.”

Vasilis is a Le Monde Institute graduate with a passion for culinary excellence. In 2020, he earned a certificate in Innovative Cuisine from the Ferrandi Paris in France and has attended prestigious seminars, including Haute Cuisine and The Best of Alain Ducasse. He is also a three-time gold medallist in Food Carving Competitions. Specialising in international cuisine, he has a deep love for Greek and Mediterranean flavours. Whether crafting haute cuisine or simple, elegant dishes, he brings passion, precision, and respect for quality to every meal. Vasilis, in addition to his solid expertise as a chef, has also completed a degree in Tourism Management. He is equally attentive to his crew’s dietary requirements, treating his teammates with the same care and consideration as he does his guests. Vasilis ensures an unforgettable dining experience on KOGO.
What is your favourite dish to cook on charter?
“One of my favourite creations is Carabineros tartare with Beluga caviar, finished with a delicate white truffle foam and elegant black accents. It is a dish that highlights exceptional ingredients while balancing depth, texture, and refined presentation - a true culinary experience for guests.”
Do you enjoy having guests in the galley? (i.e. a cooking activity...)
“Absolutely. I truly enjoy welcoming guests into the galley. We often host interactive cooking sessions where we create bespoke dishes together, tailored to their tastes and preferences. It’s a wonderful way to share my passion for cuisine and create memorable moments on board.”
How do you celebrate a guest’s birthday with your cooking?
"We create bespoke birthday celebrations tailored entirely to the guest. This may include a beautifully crafted cake, an elegant finger-food buffet, and a live cooking experience that adds theatre and interaction to the occasion. We carefully consider the guest’s preferences, favourite ingredients, age, and any dietary requirements or allergies, ensuring every detail is thoughtfully curated. Our goal is always to deliver a truly exceptional gastronomic celebration that makes the occasion unforgettable."
