He began his career freelancing on catamarans and charter sailboats before joining larger yachts, including the 70’ Speiro, 72’ Soleo, and 88’ Azimut 7G, all with extensive international charter itineraries.
Now working full-time as chef aboard NJOY, Noé focuses entirely on delivering cuisine tailored to each guest’s preferences, drawing inspiration from the freshest local ingredients and the day’s catch. His menus balance refined international flavours with regional specialities, ensuring that every meal is both a highlight of the day and a reflection of the Sea of Cortez itself.

For the past decade, he has worked with NJOY’s current owners, completing countless charters with an impeccable record of guest satisfaction.

Carlos Talamantes Méndez began his maritime journey at the age of 14, assisting with the preparation, provisioning, and maintenance of the 88’ Azimut 7G. Since then, he has gained hands-on experience both at sea and during charters, developing a wide skillset that makes him a versatile and reliable crew member.
With 550 days at sea, Carlos is proficient in navigating small boats under 5 metres and is skilled in watersports such as water skiing, snorkelling, and spearfishing. He also brings experience in catering service, table setup, interior cleaning, and bed arrangement, ensuring that life aboard NJOY is kept both comfortable and seamless.
