Crew Profiles
Terry has been messing around on boats since he was a child. Growing up on the east coast of Ireland, he started sailing dinghies and soon graduated onto larger boats. Even as a qualified electrician and optical technician, Terry yearned to turn his sailing hobby into a career. After his first trans-Atlantic crossing with friends, he did just that. A commercially endorsed MCA Yachtmaster (both sail and power), Terry previously served as both helm and launching authority for his local branch of Ireland's volunteer lifeboat service.

Frittata: Baked frittata with spinach, peppers and feta cheese, served with a side of bacon.
Bagels: Toasted bagels served with smoked salmon, cream cheese, capers, lightly pickled onions.
Caribbean French Toast: Sliced challah with coconut and a splash of Caribbean rum, served with a side of bacon.
Continental: A selection of fresh baked pastries, cheeses, cold meats, yoghurt parfaits, fresh fruit.
Avocado toast: Crunchy sourdough toast with smashed avocado, roasted tomatoes, topped with scrambled egg.
LUNCH
Caesar Salad: Crunchy romaine lettuce, Ruth’s homemade Caesar dressing, crispy homemade croutons, fresh grated parmesan and garlic shrimp.
Burgers: Freshly made meat patties on homemade brioche buns with a selection of toppings. Served with green salad and slaw.
Salmon Salad: Arugula, oranges, Roquefort, pecans and flaked fresh salmon fillet with a fresh orange vinaigrette.
Caprese: A light tasty salad of local leaves and fresh cherry tomatoes, basil, pine nuts, prosciutto and a buratta ball, drizzled with pesto. Served with freshly made focaccia bread.
Sticky ribs: Slow baked glazed ribs served with green salad and potato salad.
CAPTAINS COCKTAIL AND HORS D’OEUVRES WILL BE SERVED EACH EVENING.
MAIN COURSE/ ENTRÉE
Mahi mahi: Fresh grilled mahi mahi. Served with prosciutto wrapped asparagus, crushed crispy baby potatoes and lemon cream sauce.
Chicken: Airline chicken breast stuffed with mozzarella, sun dried tomatoes and fresh basil. Served on a bed of creamy soft polenta with a roasted red pepper sauce.
Tuna: Seared fillet of tuna with crunchy stir fried vegetables, toasted cashews and sesame noodles.
Steak: Tender fillet mignon with homemade chimichurri, garlic roast broccoli, cauliflower puree and oven roast potatoes.
Salmon: Seared fillet of salmon with a minty green pea puree and mushroom and truffle risotto.
Curry: Mild creamy thai green curry with vegetables, served with shrimp skewer and steamed jasmine rice.
DESSERT
Cheesecake: Baked cheesecake served with fresh berries and a berry compote.
Brownies: Freshly baked brownies with warm chocolate sauce and icecream.
Key lime pie: Ginger crust, served with fresh whipped cream and zingy lime zest.
Lemon cheesecake mousse: Served with fresh berries.
Guinness and chocolate cake: Served with grated chocolate and whipped cream.

Terry, Ruth, the Yacht, the entire trip was fabulous! We were able to enjoy all the amenities, (diving, waterskiing, banana boating, paddle boards), the food was fabulous, cocktails were flowing, and perfect weather. And yes, the only negative is the week went by too quickly.
My husband Vince even asked if they had limoncello and there was only one drink left so Ruth surprised us by contacting her off charter crew friends who arrived in their dinghy with a full bottle!
I would definitely recommend this crew without hesitation.

9. Overall Satisfaction: The entire experience was amazing. Terry and Ruth were wonderful. You can really tell the difference between a seasoned crew and the younger crews we’ve experienced in the past. Terry was always whistling and cheerful, had endless patience teaching us all about Cat vs Mono sailing and the quirks of the yacht, answered a thousand questions and never once seemed put out by our endless curiosity and thirst for knowledge.
Ruth’s meals were outstanding and she is a warm and cheerful presence on the boat. We loved the size of yacht for 8 of us-her spacious deck space, the big fly deck, the cabins…everything. The layout with the galley being down below made it seem as if meals magically appeared out of nowhere. That was a fun surprise as we hadn’t been on a Cat with that configuration before.
We would give this boat and crew our HIGHEST recommendation. This is now our 4th crewed charter in the VI’s and they the prize in every category. First class crew, first class cuisine, first class vessel.

My experience was by far better than I could have imagined. The boat fit all of us perfectly with enough room to find our own space, yet small enough for intimate meals. It was important to all of us to have our own bathrooms, so enough said about that.
Let's talk crew -- Ruth & Terry... I do not know where to start as they were flawless, fun, communicative, smart, detailed+++! Every question we asked about the BVI's or the ocean in general they could answer. To watch the dynamic duo in their element was a spectacular flow of energy whether it was anchoring, sailing, making beds, meal prep, dive prep, cooking spectacular meals, showing us brilliant dive/snorkel spots and following us around to pick up after us made our journey unforgettable. I highly recommend choosing this crew hands-down! Terry's sense of humor (his April fools joke got us good!) suggesting to take slow-mo video from his dingy and his quick comebacks kept us laughing. Ruth's MOST AMAZING meals EVER!!! Nuff said! We are a group of well-traveled individuals, with sophisticated palates and she blew our minds night after night. They are a solid team and so refreshing to watch them do their thing, whatever it was.
