Shay grew up in a small town outside of Dunedin, New Zealand on his family’s farm right next to the beach. He grew up racing dirt bikes, competed in horse riding, surfing, snowboarding and hunting before moving to Australia at 17 to apprentice under some of Australia’s top chefs before moving to the United Kingdom to work in various top Michelin Star restaurants across Scotland, London, Cornwall, Wales, France, Malta and a brief stint back in New Zealand before joining the yachting industry at 27. He has gained experience in restaurants ranging from molecular gastronomy - cooking over coals with ingredients grown on the estate to heavily refined French/ British fine-dining. Working in 7 countries land-based, Shay loves to infuse different techniques and flavors into his cooking, injecting Asian, Mexican and Middle Eastern flavors in to modern fine-dining but also enjoys cooking family style meals and baking fresh artesian breads.

Jon Anderson is back! He is ‘just’ your everyday typical African / Kiwi / American. Born in Dallas Texas, raised in Zimbabwe and from the age of 14 Jon found himself in New Zealand. This may sound like a confusing story and he can assure you that it is, so feel free to ask! Paihia is Jon’s home, nestled in the heart of the beautiful Bay of Islands, on the North Island of New Zealand. This is where Jon developed his love for the ocean. Diving, fishing and hunting lobsters were a daily occurrence and past time. From that point on, working on yachts was the perfect suit to encourage his ambition. “The ease of travel and the view out the window every morning are just bonuses being able to be on the water every day”. Jon comes from a wide range of hospitality backgrounds and he is just as comfortable making you a Flat White (NZ Coffee) as he is taking you water skiing; so please if Jon can do anything for you this trip, just ask.

Jess took a break from yachting to study Film at The New York Film Academy in LA over Covid specializing in Directing and trained in the Executive Assistant field to high profile clients. Rejoining the industry for her 3rd New Build project in Holland, Jess has Interior design and project management experience and is able to perform well under pressure and always strives to deliver 7-star service, all whilst having fun. Jess is a trained Pilates & Barre Instructor with BASI and Merrithew. She is always available to assist wherever need be, and is here to make your stay just that much more pleasant.
