I am the owner/manager of my own restaurant in Valencia, Dandy Horse, which I opened as the chef in 2014 to the present. My life-long dream was to run my own restaurant. The atmosphere I created has reflected my passion and joy for the art of hospitality. We specialize in international cuisine and we have been a success since we opened. I was able to make my restaurant a home-away-from home for myself and our loyal clientele. Three years later, I opened another restaurant, Dandy Canary, which featured Canarian and Mediterranean cuisine also with great success, but I had to close due the pandemic.
My yachting experience includes working as a private chef aboard a motor yacht based in Cannes and in their home in London. The cooking required a variety of dietary restrictions including gluten free, dairy and egg free, plus the children were fussy eaters. It was a great learning experience.
I was cook, sous chef and pastry chef at the Palace Fesol restaurant in Valencia, one of the most prestigious restaurants in the city. (2012-2014)"
