"I have worked on a both motor yachts and sailing vessels covering a broad range of experience starting with my first job on S/V Corwith Cramer, a student educational vessel which was at sea for months at a time. I was head of the culinary department with 4 including myself cooking 6 times a day for over 30 crew. On the S/Y Good Times, I worked with local fish mongers and farmers to provide the freshest products from Coastal Maine. The chefs prepared meals 7 days a week for large parties of charter guests - up to 40 per trip. I transition to motor yachts and continually seek to improve my skills. I am meticulous in attention to details - dietary restrictions, allergies, timing, budgeting and strict attention to sanitary standards in the galley.
My range for cuisines is broad. Being Italian though I certainly gravitate toward all things pasta, for example, making pasta by sfoglia (rolling stick), pizza, classic French and Italian pastry, Jppanese grilling techniques to name a few. I enjoy introducing new flavors to desserts. In generalm I maintain respect for conventional cooking techniques while not being afraid to try new things. I like to take the best techniques from different countries to use that as a jumping point for whatever I’m making."
